Mixed vegetable korma



1 small brinjal, cut into 1 inch cubes
1 small sweet potato, cut into 1 inch cubes
250 gms – mixed vegetables like peas, carrots, French beans and capsicum
1/2 tsp – turmeric powder
1 tsp each – ground cumin and coriander seeds
1 medium tomato, peeled and pureed
1 cup – curd
1/2 cup – grated coconut
salt to taste

How to Make Mixed vegetable korma

Mix all the vegetables together with salt and turmeric powder.
Pour in 2 cups of water and cook till the vegetables are done and little water is left.
Add the remaining ingredients and simmer for 5 mins.
